Keith Floyd – ‘Far Flung Floyd’. We lost a legend when Keith died a few years ago, he’s been an inspiration to legions of chefs and a benchmark for the telly variety. In the days of the Galloping Gourmet and Fanny Craddock, not a word said against either of them mind, he was a bright star. I cooked this dish for a very posh ‘curry evening’ in Chelsea Harbour a few years ago, Keith would have been amused.

Sabrina Ghayour – ‘Persiana’. This an exquisitely vibrant, flavour packed dish which says a big hello to the spice za’atar, a middle eastern, sun dried spice mixture. The relish is absolutely lovely and the whole thing eats perfectly with the lemon & coriander potatoes. I can’t remember who we cooked it for now. Hands up anybody?
