I was asked to make this dish for a beautiful family in Alvediston many years ago. Their grandfather used to cook it each summer at their family gatherings, but sadly, that year he had died, so I was asked to step up to the plate. It’s a traditional Malaysian, stir fried rice, breakfast dish. I think traditionally made with leftovers, so no specific recipe. It’s great hot, fantastic cold and marvellous any temperature in between. It’d good for breakfast, lunch, supper, an in between snack, a hangover cure, an isolation uplifter. It’s a no brainer really. Contains, amongst other things; bacon, chicken, baby octopus, king prawns, red pepper, garlic, ginger, chilli, coriander, a blend of Asian sauces, rice and topped with shredded omelette.

BEEF & LAMB KOFTA WITH BUTTER, GINGER, TOMATO DAAL
Kofta from Ottolenghi’s ‘Jerusalem’, packed full of superb spices, herbs and toasted, chopped pine nuts. Sitting on top of this delicious daal dish which is from Rose Prince’s ‘Dinner and party’. Cook up something green to go with it and you’re on to a winning plate of food.

BUTTER, GINGER, TOMATO DAAL
This daal is so delicious, it’s a staple to keep in the fridge and goes with pretty much anything. Try it with some pan fried white fish and sautéed spinach. I love cooking this dish, it’s just very simple and rewarding but packs masses of flavour. So if you can’t be bothered to make it yourself, a bit like humous, then you can buy it here.

STICKY DATE, STEM GINGER PUDDING, TOFFEE SAUCE
Amazingly, this classic English recipe comes from my favourite Spanish chef, Jose Pizarro in his book ‘Spanish Flavours’. It’s a deceptively light pudding, enriched with the toffee sauce. You just need to provide your favourite flavour of ice cream to go with it.
