CHICKEN RUBY
The iconic, the one and only, the original Ruby Murray from ‘Dishoom’. Ruby Murray was a 1950s Irish pop singer who’s name became Cockney rhyming slang for curry. The dish was invented at the famous Moto Mahal restaurant in Delhi. A ginger, cumin, masala, lime and yoghurt marinade. Cooked in makhana sauce and double cream, finished with ginger matchsticks and chopped coriander leaves. Great any night of the week and great for the freezer.

BASMATI HERB RICE
What it says on the tin really, with butter, red chilli, spring onion, mint, chives, parsley and seasoning. Perfect with the Chicken Ruby or the Sindhi Karri. The recipe? made it up myself, not too taxing to be honest.

SINDHI KARRI
Yoghurt and turmeric soup with curry leaves and quails eggs, red chilli and curry leaf temper. It’s from Sumayya Usmani’s ‘Summers under the Tamarind tree’. I cooked it for friends a while ago, it’s simple but mesmerising, whilst ‘Tempering’ is a particular culinary tradition which adds depth and texture.
