A lovely Moroccan dish from Claudia Roden’s ‘Arabesque’ using a fat, fresh cod supreme from Brixham, perfect for Friday fish night. I would serve it with braised lettuce and sweet peas, but you would need to concoct that yourselves.

This one’s an old favourite from the first Diana Henry book I ever bought, ‘Crazy Water, Pickled Lemons’. Khoresh is a Persian stew, unusual and exotic and eats perfectly well with simple boiled basmati, a smattering of fresh herbs and a knob of butter.

CHICKPEAS WITH SWISS CHARD

My absolute ‘go to’ comfort dish, elevated with a rich, home-made, slow cooked tomato sauce, white wine and lashings of quality olive oil. It’s from Rose Gray and Ruth Rogers ‘River Café Cook Book’, bringing back memories of old times at the River Café, in the days when I could afford to go.
