STARTER - BRAISED OCTOPUS, ROMESCO SAUCE
I really want to put octopus on the menu but it’s so expensive. To give you an idea, a 3kg whole octopus, £15 per kilo, total £45. Braise it in for an hour in olive oil, garlic and herbs, you’re left with 800 grams of cooked octopus, that’s £56.25 a kilo cooked weight. Just saying.
This dish is from Nathan Outlaw, it’s deep, rich, unctuous, oozes umami and if you really want to put some taste buds on the map you didn’t realise you had, this is the one.
