ROBUST COMFORTING FOOD AT ITS BEST
Congratulations to Marco Pierre White who opened his ‘Steakhouse, Bar and Grill’ restaurant at ‘The Stones’ hotel out on the Amesbury road recently. I picked up his book ‘Great British Feast’ about ten years ago and was inspired to make some of his classic English dishes, back in the day when he had the Yew Tree Inn in Hampshire. So I’m sharing a few dishes with you for this week’s take away.
COTTAGE PIE
This was a great family favourite in the naughties and even though the children called it ‘Cottage Yuck’ they really enjoyed it and it has kept its name in the Simcock household ever since. Proper home made stock is the secret to many of these dishes and Marco devotes a couple of pages to the subject. £8.00
FISH PIE
What lifts this dish, I think, is the use of a seriously good fish velouté, plus fresh fish and shellfish, not the frozen, fish pie mix so readily available. The super buttery mashed potato topping also helps along with grated gruyere to finish under the grill. £9.00
SAUTEED AUTUMN GREENS
This goes really well with both the fish and shepherd’s pie, keeps it healthy and keeps you feeling good all weekend. £4.00
LEEK & POTATO SOUP
As you can imagine, Marco doesn’t really do vegetarian, he certainly didn’t back in 2008 when this book came out. But I love a magnificent comforting soup and this is a proper classic autumnal favourite. £5.00
TRIFLE
Imagine life without a sherry trifle. Competitions were built around them in our extended family up in the North West in the sixties, so it’s an honour to see that Marco included one in his repertoire, albeit with a handful of toasted, chopped pistachios, considered foreign muck by my dad, bless. £5.00
